Empress Meat Loaf - cooking recipe

Ingredients
    2 small or 1 large can mushrooms, chopped (save juice)
    1/2 c. minced onion
    1/4 c. butter
    1/4 tsp. thyme
    4 c. soft bread crumbs
    1/4 c. chopped parsley (optional)
    2 1/2 lb. ground beef
    2 eggs, slightly beaten
    1 1/2 tsp. salt
    1/8 tsp. pepper
    1/3 c. catsup
    mushroom juice
Preparation
    Saute mushrooms and onion in butter until onion is transparent; stir in thyme.
    Toss into bread crumbs and parsley. Lightly mix together ground beef and remaining ingredients.
    Pack half of meat mixture in 9 x 13-inch pan.
    Spread stuffing over meat, then remainder of meat.
    Bake at 350\u00b0 for 1 hour and 15 minutes.
    Remove from oven; let stand 10 minutes before serving.
