Cheese Toast - cooking recipe

Ingredients
    2 Tbsp. butter
    1 Tbsp. flour
    1/8 tsp. cayenne pepper
    1 c. hot milk
    3/4 c. grated Cheddar cheese
    salt
    2 egg yolks, beaten slightly
    2 egg whites, stiffly beaten but not dry
    6 slices toast
Preparation
    Melt butter in saucepan.
    Blend in flour and cayenne pepper and cook for 2 to 3 minutes, stirring.
    Slowly add milk, stirring constantly until smooth and thickened.
    Stir in cheese and cook until melted.
    Add salt to taste.
    Beat 2 tablespoons hot cheese mix into yolks.
    Return the yolk-cheese mixture to the saucepan and cook over medium heat, stirring constantly for 1 to 2 minutes until thickened.
    Remove from heat.
    Gently fold in the egg whites and mound on toast.
    They must be eaten as soon as they are prepared.
