Southern Oven "Fried" Chicken - cooking recipe

Ingredients
    8 boneless skinless chicken breasts
    1 1/2 c. low-fat buttermilk
    1 Tbsp. Cajun seasoning, divided
    4 c. cornflakes cereal, crushed
    2 Tbsp. fresh thyme
Preparation
    Heat oven to 425\u00b0.
    In bowl, mix buttermilk and 1 1/2 teaspoons seasoning.
    Soak chicken in buttermilk 2 hours in refrigerator.
    In bowl, combine remaining ingredients.
    Transfer chicken to dry mixture; coat.
    Coat chicken with cooking spray; bake on a greased baking sheet 25 minutes or until golden brown and juices run clear.
    Makes 8 servings.
