Quick Minestrone Soup - cooking recipe
Ingredients

1 medium onion, chopped (1/2 c.)
1 clove garlic, minced
1 Tbsp. oil
3 c. beef broth (2 cans)
1 (8 oz.) can kidney beans, drained
1 c. undrained cut up canned tomatoes
1 rib celery with leaves, chopped (1/2 c.)
1 medium carrot, sliced
1/2 tsp. each: oregano and basil
1/3 c. alphabet pasta or macaroni
1 small zucchini, sliced or 1/2 c. frozen peas
salt and pepper to taste
parsley (if desired)
Preparation

Cook onion and garlic in oil until tender.
Stir in rest of ingredients except pasta and zucchini.
Cook, covered, 15 minutes or until tender.
Stir in pasta and zucchini.
Cook, uncovered, 8 to 10 minutes.
