Rice Pilaf - cooking recipe

Ingredients
    2 Tbsp. margarine
    1/2 c. chopped onion
    1/4 c. chopped celery
    1/2 c. green or red bell pepper
    2 c. low-sodium chicken broth
    1 c. uncooked long-grain rice
    1/2 c. sliced fresh mushrooms
    2 Tbsp. chopped fresh parsley
    3/4 tsp. black pepper to taste
Preparation
    In a small skillet over medium-high heat, melt margarine.
    Add onion, celery and bell pepper; saute 3 minutes.
    Set aside.
    Place broth and rice in a saucepan over medium heat.
    Add onion mixture and mushrooms.
    Reduce heat and simmer, covered, 30 to 40 minutes, or until rice is tender and liquid is absorbed.
    Add parsley and black pepper.
    Fluff before serving.
    Note:
    This dish may be made ahead and reheated.
