Polish Gherkin Soup(Serves 4) - cooking recipe

Ingredients
    1 qt. jar Vlasic Polish pickles
    1/2 c. brine from pickles
    3 c. peeled and diced potatoes
    2 c. peeled and diced carrots
    2 c. chopped onion
    1 stick margarine
    1 qt. chicken stock or bouillon cubes and water
    1 c. cream
    pepper, bouillon powder or brine to taste
Preparation
    Dice all pickles from jar into 1/4-inch pieces.
    Saute onions in margarine until wilted.
    Add carrots and potatoes and saute until brown.
    Stir to heat through, then add chicken stock or bouillon cubes and water.
    Add pickles and 1/2 cup brine.
    Simmer about 20 minutes.
    Add 1 cup cream and season to taste.
    Serve hot or cold.
