Minty Cottage Cheese Salad - cooking recipe
Ingredients

1 (12 oz.) carton low-fat cottage cheese
1 tsp. sugar
1 tsp. finely chopped mint
2 c. diced pineapple
1/4 head lettuce leaves
1 medium orange, peeled and sectioned
1 pinch fresh mint sprigs
Preparation

Combine cottage cheese, sugar and chopped mint; cover and chill at least 2 hours.
Just before serving, add pineapple to cottage cheese mixture; spoon into a lettuce lined bowl.
Top with orange sections; garnish with fresh mint sprigs.
