Onion Frittata - cooking recipe

Ingredients
    1/4 c. olive oil
    2 large onions, sliced very thin
    1 Tbsp. flour
    2 Tbsp. milk
    6 eggs, beaten
    salt and freshly ground pepper (black)
    1/8 tsp. nutmeg
Preparation
    Heat olive oil in a heavy frying pan.
    Add the onions.
    Cook, stirring frequently, over lowest possible heat until the onions are soft and golden.
    Stir the flour into the milk.
    Combine with the eggs and beat to mix thoroughly.
    Season with the salt, pepper and nutmeg.
    Pour the egg mixture over the onions.
    Cook until the Frittata is well set at the bottom and golden brown.
    Put a plate, the size of the frying pan over the Frittata.
    Turn the frying pan over so that the Frittata is on the plate, cooked side up.
    Slide back into frying pan and cook until set.
    Cut into wedges and serve hot or lukewarm.
