Sunshine Fish - cooking recipe

Ingredients
    1 fish filet (flounder, cod or your choice)
    3 Tbsp. margarine, melted
    2 Tbsp. orange or lemon juice
    1 Tbsp. orange or lemon rind, grated
    1/2 tsp. salt
    1/2 tsp. white pepper
    1 tsp. nutmeg
Preparation
    Mix together melted margarine, juice, grated rind, salt, pepper and nutmeg.
    Place filet on a piece of aluminum foil in a shallow baking dish.
    Baste filet with sauce, using all of it. Fold foil over fish.
    Bake at 325\u00b0 for 25 minutes.
    Test for doneness.
    Using a fork, if fish flakes, it is done.
    Do not overcook.
    Yield:
    1 filet for this mixture.
