Shrimp Creole - cooking recipe

Ingredients
    1/3 c. oil
    1/4 c. flour
    2 c. chopped onion
    1/2 c. chopped green pepper
    1 c. celery
    2 (8 oz.) cans tomato sauce
    2 lb. shrimp
    2 tsp. salt
    1/4 tsp. pepper (black)
    1/8 tsp. red pepper
    1/4 to 1/2 c. water
    2 tsp. parsley
Preparation
    Make a golden roux of oil and flour.
    Add onion, green pepper and celery.
    Cook slowly until clear.
    Add tomato sauce and cook, covered, over low heat for 20 minutes.
    Add shrimp, salt and peppers.
    Add water, if necessary.
    Cook 10 to 15 minutes.
    When ready to serve, stir in parsley.
    Serve on rice.
