Zucchini Cake - cooking recipe

Ingredients
    3 eggs
    1 c. Crisco oil
    1 1/2 c. sugar
    3 medium zucchini, grated large (2 c. well drained zucchini)
    2 tsp. vanilla
    2 c. sifted flour
    1/4 tsp. baking powder
    2 tsp. baking soda
    3 tsp. cinnamon
    1/4 tsp. salt
    1 c. raisins
    1 c. chopped nuts
    1 c. coconut
Preparation
    In large bowl, sift flour, baking powder, baking soda, cinnamon and salt together.
    Blend in sugar.
    Add eggs, oil and vanilla; beat at medium speed 2 minutes.
    Add zucchini, raisins, nuts and coconut and blend.
    Spoon batter into greased loaf pans.
    Bake at 375\u00b0 for 1 hour or until done.
