Mexican Style Peppers - cooking recipe

Ingredients
    1 lb. ground beef
    1 can stewed tomatoes
    1 c. uncooked quick rice
    1 pkg. taco seasoning
    4 green peppers, cut up
    shredded cheese
Preparation
    Brown beef and drain. Add seasoning mix according to package directions; set aside.
    In a saucepan, cover and cook tomatoes and rice until tender. Rice cooks by using tomato liquid.
    Set aside. Boil peppers until soft.
    Combine all ingredients except cheese. Fill a 13 x 9 x 2-inch pan with mixture and top with cheese.
    Warm in oven until cheese is melted.
    Great do ahead recipe.
    Just re-warm in oven when ready to use.
