Chicken Tetrazzini - cooking recipe
Ingredients

2 oz. can mushrooms stems and pieces
2 Tbsp. green pepper, chopped
2 Tbsp. Puritan oil
3 Tbsp. flour
1/2 tsp. salt
dash of pepper
1/2 c. chicken broth
13 oz. can evaporated skim milk
1 1/2 c. diced cooked chicken
1 Tbsp. pimento, chopped
1 Tbsp. grated Parmesan cheese
2 c. (about 4 oz. uncooked) thin spaghetti, cooked and unsalted
Preparation

Grease 1 1/2-quart casserole lightly with oil.
Cook mushrooms and peppers in oil until peppers are tender.
Stir in flour, salt and pepper.
Mix broth with milk.
Add slowly to flour mixture, stirring constantly.
Cook until thickened.
Stir in chicken and pimento.
Mix in spaghetti.
Pour into casserole.
Sprinkle with cheese.
Bake at 350\u00b0 until bubbly throughout, about 30 minutes. Makes 4 (1-cup) servings, 375 calories per serving.
