Fabulous Apple Cake - cooking recipe

Ingredients

4 eggs
1 3/4 c. sugar
1 c. olive or canola oil
1/2 tsp. salt
1/2 to 3/4 c. walnuts or pecans, chopped
2 c. flour
1 tsp. cinnamon
1 tsp. baking soda (note: self-rising flour includes baking soda)
1 tsp. vanilla
6-8 diced apples
1/2 c. raisins

Preparation

Combine sugar and oil in mixing bowl.
Beat for 5 minutes and add eggs one at a time.
Continue to beat well until combined. Add dry ingredients mixing well.
Fold in apples, raisins and nuts. Bake in 350\u00b0
oven for 1 hour in a 9 x 13-inch pan.
Cool on rack for 30 minutes before serving.
Serves 16 - 20.
