Spring Vegetable Ring - cooking recipe

Ingredients
    6 new potatoes
    6 Tbsp. butter, divided
    1/4 c. water
    1 clove garlic, minced
    1 lb. fresh green beans, cut into 1 1/2-inch pieces
    2 large fresh tomatoes, peeled and chopped
    1 tsp. dried basil
    1 tsp. salt
    1/8 tsp. pepper
Preparation
    Scrub potatoes.
    With a vegetable peeler or sharp knife, remove a thin strip of peel around center of each potato.
    Place potatoes in a 1 1/2-quart casserole.
    Add 2 tablespoons butter and the water.
    Cover with plastic wrap.
    Microwave on High for 12 to 16 minutes.
    Let stand, covered, while cooking beans.
    Place remaining butter in a large shallow bowl.
    Microwave on High until melted.
    Add remaining ingredients.
    Cover with plastic wrap. Microwave on High for 7 to 9 minutes.
    Let stand, covered, for 3 minutes.
    Remove cover and surround with cooked potatoes.
    Makes 6 servings.
