Red Cabbage And Bell Pepper Slaw - cooking recipe

Ingredients
    1/2 c. white vinegar
    1/2 c. water
    1/4 c. sugar
    3/4 tsp. salt
    1/2 tsp. Dijon mustard
    3 Tbsp. olive oil
    1 tsp. mustard seed
    1/2 head red cabbage, shredded (about 3 c.)
    2 red or yellow bell peppers, cut into julienne strips
Preparation
    Boil vinegar, water, sugar, salt and mustard.
    Simmer 3 minutes in open saucepan.
    In a large, heavy skillet, heat the oil until hot but not smoking.
    Add mustard seed and saute until they begin to pop.
    Stir in cabbage.
    Saute 1 minute.
    Stir in pepper and saute 1 minute.
    Add vinegar mixture and simmer for 1 minute. Drain vegetables in sieve over a saucepan.
    Transfer vegetables to bowl.
    Boil liquid until it reduces to about 3 tablespoons.
    Stir into vegetables.
    Chill, covered, overnight or 1 hour.
    Serves 4.
