Zucchini Oatmeal Muffins - cooking recipe
Ingredients

2 1/2 c. flour
1 1/2 c. sugar
1 c. raisins
1/2 c. quick cooking oats, uncooked
1 Tbsp. baking powder
1 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
4 eggs
1 1/2 c. shredded, unpeeled zucchini
3/4 c. vegetable oil
Preparation

Grease well 18 muffin pan cups.
Preheat oven to 375\u00b0. Measure and stir first 8 ingredients in a large bowl.
In a separate bowl, beat eggs and all other ingredients. Add egg mixture to flour mixture and stir until flour is moistened. Spoon into prepared muffin pans and bake 20 minutes or until toothpick comes out clean. Serve warm.
Makes 18 (2 1/2-inch) muffins.
