Vegetable Beef Soup(Minestrone Di Carne) - cooking recipe

Ingredients
    3 lb. beef meat and bones, washed
    4 qt. water
    1 onion, chopped
    3 carrots, chopped
    3 celery stalks, chopped
    8 oz. tomatoes
    1/4 lb. string beans
    1/2 head cabbage, sliced
    1 Tbsp. salt
    1 tsp. pepper
    1/2 tsp. oregano
    2 bay leaves
    1 frozen mixed vegetables
    3 potatoes, peeled and cubed
    1/2 c. barley (optional)
Preparation
    Place meat, bones and water in an extra large saucepan. Cover and bring to
    boil.
    Reduce
    heat
    and skim surface with slotted spoon.
    Add all the rest of ingredients except for the mixed vegetables and potatoes.
    Let
    cook
    3 hours on a medium low heat. Add
    mixed
    vegetables and potatoes;
    cook an additional 45 minutes.
    Taste
    for
    salt
    and
    pepper;
    adjust
    to taste.
    Makes 6 to 8 servings.
