Lump Crab And Corn Bisque - cooking recipe
Ingredients

1 carrot, minced
2 ribs celery, minced
1 medium onion, minced
1/2 red bell pepper, chopped small
2 cloves garlic, minced
2 c. fish stock or clam juice
1 c. white wine
hot sauce to taste
3 c. scalded heavy cream
1/4 c. flour
1/4 c. vegetable oil
2 c. lump crab meat
1 c. cooked corn kernels
salt and pepper to taste
Preparation
-
Saute until clear the first 5 ingredients in a soup pot.
Add the next 6 ingredients and stir over medium/high heat until thickened, but do not boil.
At the last minute, add crab, corn, salt and pepper.
Serve hot, garnish with crab claws.
