Microwave Rice Pudding - cooking recipe

Ingredients
    3 beaten eggs
    2 c. milk
    1/3 c. sugar
    1 tsp. vanilla
    1/2 tsp. salt
    2 c. cooked rice
    1/3 c. raisins
    cinnamon
    nutmeg
Preparation
    In a 2-quart casserole dish, combine eggs, milk, sugar, vanilla and salt.
    Add rice and raisins; mix well.
    Microwave just until thickened (uncovered), 8 to 10 minutes.
    Stir every 2 minutes.
    Add cinnamon.
    Fold thickened part from edge to middle. Continue cooking until set.
    Sprinkle with nutmeg and let stand 30 minutes without stirring.
    Serve warmed, chilled with light cream.
    Serves 6 to 8.
