Ingredients

4 eggs
1/4 tsp. salt
1/3 c. sugar
2 c. skim milk
1 c. heavy cream
1 tsp. vanilla
1 1/4 c. fine grated coconut
1 unbaked (9 or 10-inch) pie shell
Preparation

Beat eggs, salt and sugar.
Stir in milk, cream and vanilla, then coconut.
Pour into pie shell.
Bake at 425\u00b0 for 40 minutes or until knife comes out clean.
Cool.
