Cornbread Salad - cooking recipe
Ingredients

1 box Jiffy cornbread mix
3 medium tomatoes
1 c. bell pepper, chopped
1/2 c. green onion, chopped
1 medium onion, chopped
1/2 c. sweet pickles, chopped
6 pieces crisp, crumbles
1/2 c. mayonnaise
1/2 c. sweet pickle juice
additional bacon, fried crisp and crumbled
green onion tops, chopped fine
Preparation

Bake cornbread according to pkg. directions and let cool. Mix tomatoes, bell pepper, green onion, onion, pickles and bacon. In a separate bowl, mix mayonnaise and pickle juice together. Crumble corn bread into a shallow dish; add a layer of tomato mixture; nest, spread a layer of mayonnaise mixture; repeat layers until complete. Top with additional crumbled bacon and green onions if desired. Serve as a cool dish.
