Gazpacho Salad - cooking recipe

Ingredients
    2 Tbsp. oil
    2 Tbsp. vinegar
    1 clove garlic, minced
    1/2 tsp. basil leaves
    1/8 tsp. salt
    1/8 tsp. black pepper
    1 1/2 c. cooked rice
    1 Tbsp. chopped parsley
    1 c. sliced mushrooms
    2 medium tomatoes, cut in wedges
    1/4 c. green or red pepper strips
    1/4 c. sliced green onions (include tops)
Preparation
    Combine oil, vinegar, garlic, basil leaves, salt and pepper. Mix well.
    Add remaining ingredients.
    Toss lightly and serve on lettuce leaves.
