small (70 to 90) peeled and deveined shrimp

Preparation

Prepare Basic Creole Sauce according to recipe.
How much you need depends on how many you are going to feed.
For one gallon, you need approximately 2 pounds smoked sausage (sliced thin), the meat from 1 medium fryer (boil and pull meat) and 1 1/2 pounds (70 to 90) peeled and deveined shrimp.
Cook 2 pounds rice.
Freeze what's left.
