Irish Baked Lamb Stew - cooking recipe

Ingredients
    12 medium red potatoes, peeled
    4 large onions, peeled and cut in quarters
    3 to 4 lb. trimmed lamb shoulder, cut in 1-inch cubes
    1/2 lb. thick cut bacon, diced
    generous amounts crumbled thyme (1 tsp.)
    2 to 3 Tbsp. parsley, minced
    3 c. Lamb Stock (to follow)
    1 bay leaf
Preparation
    Slice half of potatoes very thin and layer them on the bottom of Dutch oven or casserole.
    Slice onions 1/2-inch thick and layer 1/2 of onions over potatoes.
    Arrange lamb cubes and bacon over onion and potatoes.
    Sprinkle with thyme, salt and pepper.
    Add remaining onions and remainder of potatoes (left whole).
    Pour in Lamb Stock.
    Sprinkle with more salt and pepper.
    Add bay leaf. Cover tightly.
    Bake at 350\u00b0 for 2 1/2 hours.
