Crawfish Or Shrimp Stuffed Potatoes - cooking recipe

Ingredients
    4 to 5 large baking potatoes
    1/4 c. onion, chopped
    1/4 c. bell pepper, chopped
    1 small can diced Ro-Tel tomatoes
    4 Tbsp. margarine
    1 small pkg. shredded Cheddar cheese
    2 Tbsp. bacon bits (optional)
Preparation
    Bake potatoes and cut in half lengthwise.
    Scoop out \"meat\" of each potato half.
    Mix with shredded cheese and bacon bits; set aside.
    Saute the shrimp or crawfish in margarine with onion and bell pepper.
    Mix in Ro-Tel and add to potato mixture.
    If mixture is too stiff, add a little milk.
