Mushroom Risotto(May Be Used With Pollo De Peones Del Felipe) - cooking recipe

Ingredients
    1 yellow onion
    8 oz. fresh mushrooms (chantrelles or morels are great)
    1 1/2 tsp. canola oil
    1 c. brown rice
    2 1/2 c. chicken stock or chicken broth
    few sprigs of parsley and basil
    1/3 c. walnuts, pecans, almonds or Grape-Nuts
Preparation
    Peel and chop the onion fine.
    Clean and slice the mushrooms. Saute the onion and mushrooms in the oil in a heavy saucepan until soft and golden brown.
    Add the rice.
    Saute for a few minutes, until coated.
    Add broth and bring to a boil.
    Cover.
    Cook over medium-low heat until rice is cooked (about 40 minutes).
    Consult rice package for cooking time which varies.
