Mexican Black-Eyed Peas - cooking recipe
Ingredients

16 oz. pkg. dried black-eyed peas
1 medium onion, chopped
1/2 c. water
1 can diced tomatoes
2 Tbsp. garlic salt
1/4 tsp. pepper
2 lb. rolled pork sausage
1 can Ro-Tel tomatoes
2 tsp. sugar
2 1/2 tsp. chili powder
2 1/2 tsp. celery salt
Preparation

Cover peas with water; soak overnight.
Brown sausage, stirring to crumble.
Add onion; cook until tender. Drain.
Drain peas.
In large pot, add peas with sausage; stir well.
Add remaining ingredients; stir.
Bring to boil, reduce heat and simmer 1 1/2 hours.
Add water if needed.
Great at New Years.
