Irish Potato Soup - cooking recipe
Ingredients

4 c. chicken broth
4 medium potatoes, pared and cut into eighths
3 medium onions, diced
1/2 tsp. salt
1/2 c. whipping cream
3 Tbsp. minced parsley
salt and pepper to taste
Preparation

In large pot, bring broth, potatoes, onions and salt to boil. Simmer, covered, 20 minutes.
With potato masher or wooden spoon, coarsely mash potatoes in broth.
Add whipping cream and parsley. Heat 5 minutes and serve.
Makes 6 servings.
