German Red Kraut - cooking recipe

Ingredients
    1 head red cabbage, sliced thin
    1 onion, minced
    1/4 peeled red apple, sliced thin
    1 1/2 Tbsp. Crisco
    3 Tbsp. sugar
    1/4 c. vinegar
    salt to taste
    pepper to taste
Preparation
    Melt Crisco in large pot.
    Take off heat and add the ingredients.
    Put back on stove and simmer until cabbage turns a blue color (1 hour), uncovered.
    After cabbage turns, add hot water to cover cabbage.
    Cook for 3 more hours on low heat, covered.
    Test for taste.
    Add sugar, salt or vinegar as needed. Never put vinegar directly on top of cabbage.
    Put on side, then mix.
