Pea Soup - cooking recipe

Ingredients
    1/2 peck green peas
    cold water
    1 qt. milk
    2 oz. butter
    4 Tbsp. flour
    salt and pepper
Preparation
    Shell green peas.
    Wash the peas and put them in a soup kettle.
    Cover with cold water.
    Boil 20 minutes.
    Take out 1 cup and press the remainder through the puree sieve.
    Return the soup to the kettle and add milk and 1 cup of peas.
    Rub butter and flour until smooth; stir into the soup and stir continually until the soup is thick and smooth.
    It should be the consistency of thick cream.
    Season with salt and pepper and serve.
