Tomato Stew - cooking recipe

Ingredients
    3 slices smoky bacon, diced (3/4 c.)
    1 purple onion, chopped (1 c.)
    4 c. chopped tomatoes or 4 c. stewed tomatoes
    salt and pepper to taste
    1/2 tsp. Tabasco or to taste
    4 to 5 baking powder biscuits, broken into large pieces or 4 slices bread, torn into large pieces
    sugar (up to 1 tsp. if needed)
Preparation
    In a hot heavy bottomed pot or Dutch oven add bacon and onion. Cook over medium-low heat, stirring often until onion is soft and bacon is lightly browned.
    Add tomatoes, salt, pepper and Tabasco. Cook 10 minutes, stirring often.
    Add the broken biscuits and cook 2 or 3 minutes more.
    Taste and if too acidic, add sugar to balance flavors.
    Serve hot.
    Serves 4.
