Jefferson Davis Pies - cooking recipe

Ingredients
    3 c. sugar
    1 c. butter or margarine
    4 eggs, beaten lightly
    1 c. milk
    1 Tbsp. flour
    1/4 tsp. salt
    1 tsp. vanilla
    pastry for 2 pies
    1/2 c. lime juice (Key limes or the Persian variety)
    1 can (14 oz.) sweetened condensed milk (Eagle Brand)
    1 carton (8 oz.) nondairy whipped topping (Cool Whip)
    few drops green food coloring (optional)
    11 whole graham crackers (1/2 of 16 oz. box), crushed
    2 Tbsp. sugar
    1/2 tsp. butter-flavored sprinkles
    1 egg white
Preparation
    Coat a 9-inch pie pan with nonstick cooking spray.
    Crush the crackers into fine crumbs.
    Mix with the sugar, butter-flavored sprinkles and egg white until the crumbs are moist.
    This crust will not be as moist as one made with melted butter or margarine. Press onto bottom and up sides of prepared pie pan.
    Makes 1 (9-inch) pie shell or 10 servings.
