Carrot Cheddar Casserole - cooking recipe
Ingredients

1 lb. cooked and mashed carrots (about 2 c.)
2 beaten eggs
1 1/2 c. milk
1 c. shredded strong cheese
1 c. coarsely broken cracker crumbs
2 Tbsp. butter or oleo
1 tsp. salt
Preparation

Combine all ingredients and mix well.
Put in a lightly greased 8 x 8 x 2-inch baking dish.
Bake in a 350\u00b0 oven for about 60 minutes or until a knife inserted comes out clean.
