Armenian Vegetables - cooking recipe
Ingredients

1/2 eggplant
1 green bell pepper
1 potato
1 large onion
2 carrots
1/4 lb. green beans
2 zucchini squash
2 summer squash
mushrooms
2 fresh tomatoes
2 (8 oz.) cans tomato sauce
1/2 c. oil
2 Tbsp. butter
Preparation

Cut all vegetables into medium size pieces into large bowl. Add oil and tomato sauce.
Mix together and pour into large baking pan and cover with foil.
Cook at 350\u00b0 for 1 hour.
Baste every 20 minutes.
If it gets dry, add more sauce.
