Holiday Potatoes - cooking recipe

Ingredients
    3 lb. potatoes
    2 large onions, thinly sliced
    1/2 tsp. salt
    1/4 c. butter or margarine
    3 Tbsp. all-purpose flour
    2 c. milk
    1/2 c. grated Cheddar cheese
    3/4 tsp. salt
    1/4 tsp. white pepper
    1/2 c. chopped fresh parsley
    1 (2 oz.) jar diced pimentos, drained
Preparation
    Peel and cut enough potatoes into 1/4-inch slices to measure 8 cups.
    Combine potato slices, onions and 1/2 teaspoon salt in a large Dutch oven.
    Add water to cover.
    Bring to a boil.
    Cover. Reduce heat and cook 5 minutes.
    Drain and set aside.
