Gluten Free Pastry - cooking recipe
Ingredients

1/4 tsp. cream of tartar
1 1/2 c. brown rice flour
3 Tbsp. potato flour
1/2 tsp. salt
1/2 c. shortening
1 egg
1/3 c. plus 1 Tbsp. milk
Preparation

Sift dry ingredients together.
Cut in shortening.
Add egg and milk.
Stir into a ball.
Knead a few seconds.
Roll out between sheets of wax paper or foil.
Use as with regular pie crust.
Before baking, brush the top crust with a slightly beaten egg white and sprinkle with sugar.
This gives a golden brown, very pretty crust.
You can also brush the top crust with milk and sprinkle with sugar.
If you fail to do either, your crust will be quite pallid.
Bake at 425\u00b0 for 10 to 12 minutes for single crust.
