Salmon Cakes With Couscous - cooking recipe

Ingredients
    14 3/4 oz. can salmon
    1 egg
    1/4 c. dry bread crumbs
    1 tsp. lemon juice
    1 tsp. ground cumin
    salt and pepper
    1 small onion
    1/3 c. roasted red peppers, drained
    2 1/2 Tbsp. oil
    1 1/2 c. chicken broth
    1 c. couscous
    1/4 c. raisins
Preparation
    Drain the salmon and combine with egg, bread crumbs, lemon juice, cumin and 1/2 teaspoon salt.
    Shape into 4 patties.
    Dice onion and red peppers.
    In a saucepan, heat 1 tablespoon oil over medium heat.
    Add onion.
    Cook until tender.
    Add stock and bring to a boil.
    Stir in the couscous, red peppers, raisins, 1/2 teaspoon salt and 1/4 teaspoon pepper.
    Cover and remove from heat. Let stand 5 minutes.
