Mexican Hominy - cooking recipe

Ingredients
    vegetable cooking spray
    1/2 c. chopped onion
    1 clove garlic, minced
    1 (15 oz.) can yellow hominy, drained
    1 c. chopped tomato
    2 Tbsp. canned chopped green chiles
    1/2 tsp. chili powder
    1/8 tsp. salt
    1/4 tsp. pepper
    1/4 c. shredded 40% less fat or fat-free sharp Cheddar cheese
Preparation
    Coat a nonstick skillet with cooking spray; place over medium-high heat until hot.
    Add onion and garlic and saute until tender.
    Stir in hominy and remaining ingredients, except cheese. Spoon mixture into a 1-quart baking dish coated with cooking spray.
    Bake, uncovered, at 350\u00b0 for 25 minutes.
    Sprinkle with cheese and bake 5 minutes.
    Yield: 4 servings.
