Ingredients

2 c. sugar
4 eggs
4 Tbsp. vinegar (plain white)
4 Tbsp. cornstarch
2 c. water
2 small lumps butter
1 tsp. lemon extract
1 (9-inch) baked pie shell
whipped cream
Preparation

Combine sugar, eggs, vinegar, cornstarch and water in double boiler and cook until thick and smooth, stirring occasionally. Just before removing from heat, stir in the two small lumps of butter and lemon extract.
Pour into baked pie shell.
Top with whipped cream.
Makes one 9-inch pie.
