Cream Cheese Mints - cooking recipe

Ingredients
    1 c. (scant) granulated sugar
    1 (3 oz.) pkg. cream cheese at room temperature
    1 tsp. mint extract
    1/2 tsp. food coloring
    3 c. powdered sugar
Preparation
    Line a baking sheet with waxed paper; set aside.
    Pour sugar in small bowl and set aside.
    In another small bowl, combine cream cheese, extract and food coloring.
    Stir with wooden spoon. Gradually add powdered sugar and stir until well blended.
    Mixture will become quite stiff and may require kneading as one would for dough.
    When well mixed, form into balls about 1-inch in diameter. Roll in granulated sugar.
    Place on baking sheet and press flat with the tines of a fork.
    Refrigerate until ready to serve. Makes 1 1/2 pounds.
