Red Leaf Salad With Honey Vinaigrette - cooking recipe

Ingredients
    4 c. torn red leaf lettuce
    1 orange, peeled and sectioned
    1 apple, cut into bite size pieces
    1/2 small cucumber, thinly sliced
    2 Tbsp. toasted chopped walnuts or roasted peanuts (leave out nuts, 0 fat)
    1/4 c. white wine vinegar
    3 Tbsp. honey
    2 tsp. stone ground mustard
Preparation
    Combine vinegar, honey and mustard in screw-top jar and shake to mix well, making Honey Vinaigrette.
    Place orange, apple and cucumber in bowl of Honey Vinaigrette while preparing lettuce. Pour off vinaigrette into a jar.
    Toss fruit and cucumber with lettuce.
    Serve with Honey Vinaigrette.
    Or divide lettuce, fruit and cucumber among 4 salad bowls and serve with Honey Vinaigrette and nuts.
