Zucchini-Lime Salad - cooking recipe

Ingredients
    1 (8 oz.) can crushed pineapple, undrained
    1 c. shredded zucchini
    1 (3 oz.) pkg. lime Jell-O
    2 Tbsp. lime juice
    2 c. thawed Cool Whip
Preparation
    Drain pineapple, saving juice; add enough water to make 1 1/4 cups.
    Set pineapple aside.
    Bring liquid to a boil; add lime Jell-O, stirring until Jell-O melts.
    Add lime juice; chill until mixture is consistency of unbeaten egg whites.
    Fold in pineapple, zucchini and Cool Whip.
    Pour into lightly oiled 6-cup mold.
    Cover and chill until firm.
    Yields 8 servings.
