Ratatouille(Ra-Ta-Tooey) - cooking recipe

Ingredients
    1 large can peeled tomatoes
    1 peeled medium eggplant
    3 zucchini
    1 medium onion
    1 green pepper (optional)
Preparation
    Cut everything into bite size pieces.
    In large covered pot, first cook tomatoes (with juice) and onion until onion is soft. Add zucchini, eggplant and green pepper.
    Cook for approximately 15 minutes.
    Do not let eggplant and zucchini become mushy!
    Can be served hot or cold.
    If cold, add a dab of sour cream on top. Good anytime of year, but excellent with fresh summer produce!
