Chicken With Mushrooms And Rice - cooking recipe
Ingredients

2 1/2 to 3 lb. chicken pieces
3/4 c. uncooked rice
2 tsp. seasoned salt
4 medium carrots, peeled and sliced 1/2-inch thick
2 Tbsp. cooking oil
1/2 c. chopped onion
8 oz. fresh mushrooms
2 c. water or chicken broth

Preparation

In a skillet, brown chicken pieces on all sides in oil for 15 minutes.
Remove chicken.
Drain all but 2 tablespoons fat.
Add rice to skillet along with onion.
Cook, stirring, until rice is lightly browned.
Add mushrooms, carrots and water and place chicken atop rice mixture.
Season the chicken with salt and pepper.
Sprinkle with paprika.
Simmer, covered, for 45 minutes or until chicken and rice are done.
Makes 4 servings.
