Ingredients

2 c. sifted all-purpose flour
3 Tbsp. sugar
2 tsp. baking powder
1/2 tsp. salt
2 eggs, separated
1 1/4 c. milk or buttermilk
1/3 c. vegetable oil
Preparation

Sift flour with sugar, baking powder and salt into a bowl. Beat egg whites until stiff, but not dry in a small bowl, set aside.
Beat the egg yolks well in a medium-size bowl and stir in milk.
Add dry ingredients and mix just enough to blend.
Add vegetable oil.
Fold in egg whites.
Bake in a moderately hot waffle iron, 4 to 5 minutes, until crisp and brown or as iron manufacturer directs.
Serve hot with butter, syrup, honey or your favorite flavor of preserves, warmed.
