Orange Muffins - cooking recipe
Ingredients

2 c. unbleached all-purpose flour
1/2 to 3/4 c. sugar
2 1/2 tsp. baking powder
1/4 tsp. salt
1 large or 2 small oranges
1/4 to 1/3 c. milk
1/3 c. butter, melted and cooled
1 large egg, beaten
1 tsp. vanilla
1/4 tsp. soda
1/2 c. pecans, coarsely chopped and lightly toasted
Preparation

Preheat oven to 400\u00b0.
Spray 12 muffin cups with Pam, or line with paper liners.
In a large mixing bowl, combine flour, sugar, baking powder and salt.
Grate zest of orange and juice it.
Add enough milk to orange juice to measure 1/2 cup, plus 2 tablespoons.
Pour into a second bowl.
Add butter, egg, vanilla and baking soda; whisk until blended.
Add wet ingredients to dry; combine with as few strokes as possible.
Fold in orange zest and pecans.
Spoon into muffin cups.
Bake for 15 to 20 minutes.
May be glazed with orange juice, zest and sugar.
