Award Winning Chili (Beans) - cooking recipe

Ingredients
    2 c. pinto beans
    1 or 2 pinches oregano
    1/4 c. sugar
    4 c. water
    1 clove garlic, smashed
    salt pork, ham hock or bacon (as desired; pick your size)
    1 medium size onion, chopped
    1/4 tsp. baking soda
    1 (12 oz.) mild green chili salsa (use hot, if desired)
    salt as needed (not much)
Preparation
    Soak beans with 1 tablespoon baking soda and clean as usual. Cook until beans are firm, not soft.
    Add other ingredients, except the salsa, early in the process of cooking.
    Near the end of the cooking time, you judge, add the entire contents of the salsa. The beans are best if not mushy. Stir often while cooking.
