Potato Salad - cooking recipe
Ingredients

5 medium potatoes, cut into 3/4-inch cubes (peeling optional)
1/4 c. olive oil
1/4 c. lemon juice
2 garlic cloves, minced
1/4 c. chopped parsley (fresh)
1 tsp. salt
1 tsp. paprika
1 tsp. ground cumin
2 medium tomatoes, cut into 3/4-inch cubes
3/4 c. thinly sliced red onion
Preparation

In a heavy 3-quart saucepan, cook potatoes, covered in 2 inches of boiling water for 10 to 12 minutes or until just tender. Meanwhile, in a large bowl, whisk oil, lemon juice, parsley, garlic, salt, paprika and cumin.
Mix in tomatoes and onion.
When potatoes are done, drain thoroughly and add to bowl.
Toss gently to coat completely.
Serve warm or at room temperature.
Serves six.
