Skillet Enchiladas - cooking recipe
Ingredients

1 lb. ground beef or cubed chicken
1 medium brown onion, chopped
1 tsp. garlic, minced
1 doz. corn tortillas
1/2 c. oil
2 c. Cheddar cheese, shredded
1 small can sliced olives
1 large can enchilada sauce
Preparation

Cook meat in a large skillet 10 minutes on medium heat with onion and garlic; set aside in a bowl.
Cut tortillas into 2-inch strips, then in half again.
Heat oil in the skillet.
Fry a few of the tortilla strips at a time until crisp.
Drain oil.
In skillet, combine crisp tortilla strips and meat and onion mixture. Stir gently.
Add cheese, olives and enchilada sauce.
Simmer 15 minutes.
Serve with beans and rice.
Serves 6.
